You guys KNOW that I’m a southern girl. Born and bred in North Carolina…but, believe it or not…I’ve NEVER had Tater Tot Casserole (we more a meat and potato kind of family).
WELL….we had a bag of OreIda Sweet potato fries and tater tots in the freezer…and I thought I’d whip up a new recipe. Eli and I came up with “Tater Tot Casserole WITH Sweet Potato fries”.
Here’s what you’ll need:
1/2-1 pound of chicken breasts (boil, fry, whatever….just cook it)
Frozen tater tots
Frozen Orieda Sweet Potato Fries
2 cups cheddar cheese
1can of Cream of Chicken Soup
1 cup of Sour Cream
2 cups of Broccoli (cooked)
1/2 cup of milk
1 teaspoon Garlic powder
1 teaspoon Onion Powder
1/4 teaspoon Pepper
1/2 teaspoon Cayenne Pepper
1/2 teaspoon seasoning salt
First….preheat your oven to 350. Go ahead and mix in a bowl your soup, sour cream, garlic powder, onion powder, pepper, cayenne pepper, seasoning salt.
Make sure you’ve already cooked your broccoli and chicken. Cube your chicken and put it aside.
Go back to your mixing bowl. Now…add your milk and cheese…and stir it all up!
Grab a 9×13 glass dish…spray it with Pam…and line the bottom with your chicken and broccoli.
Now…all you have to do is pour that mixture on top.
Finally…Add tater tots and the sweet potato fries to the top…and then sprinkle with a little more cheddar cheese. (make funny shapes, half and half…have fun with it)
Bake for 45 minutes….and then enjoy!
