Tis the season, for holiday shopping….Falalalala…la la…la…la…
And while I was out at Save Mart Supermarket this week, I noticed a SUPER Sale on turkey/meat. Yeah…you Buy One and Get One FREE! Who doesn’t love a deal this time of year?? I decided a few turkey breasts would be manageable for me (you should just see me cook a WHOLE turkey!)
FYI…when you purchase a turkey or turkey breast…please note…THEY ARE FROZEN!
Yeah…so, you’ll need to UNTHAW it forEVER (no, just 24-48 hours) beFORE you can start cooking with it.

My masterpiece! Turkey Tortilla Soup! Would you like to know how to make it?? (you know it’s totally easy if I can do it!)
Here’s what you’ll need:
- Turkey Breast (I only used about half of mine)
- 1 medium onion (chopped up)
- 2 Cans of Rotel with Lime juice and Cilantro
- 2 Cans of Black Beans (drain and rinse them)
- 6 Cans of Chicken Broth
- 4 Cans of Water (cans, not cups)
- 1 tsp Chili Powder
- 1/2 tsp Cumin
- 1/2 tsp. Garlic Salt
- 1/2 tsp. Cayenne Pepper (watch it if you don’t like it spicy!)
- 1-2 Avocados
- shredded mozarella cheese
- sour cream
- tortilla chips
- fresh cilantro
You’ll first want to UNTHAW your turkey breast and cook it according to the package directions. Then, I shred mine (you can also cube it if you’re good with a knife).
Then, in a BIG pot (because this makes a HUGE pot of soup), cut up your onion and start cooking it while you get your other ingredients together.
Your onions don’t have to start browning, just put them in first. Now, pour everything else in.
Beans (drain and rinse them first!…or else, it will totally gross and you’ll have to start over)
All the spices…and turkey.
Now…just let it simmer. The longer the better (I let mine simmer for at least an hour).
Now, just add your garnishes. Sprinkle with cheese, break some tortilla chips and drop them in, cilantro (if you need more), and sour cream always makes this soup taste yummy (and…add more sour cream if it’s a little too spicy for you). #FreshFinds
