Sam’s Club in the morning AFTER you drop off your kids at school is like Heaven on Earth.  You can flash your card as you walk in the door, grab a cart (where your purse will fit because it isn’t holding a screaming child), and you can walk down EVERY SINGLE aisle and actually SEE the items that Sam has picked specifically for me to look at this fine Monday morning.

Ok…my fairytale shopping adventure may be making you a BIT jealous if your kids haven’t started school yet…but, I did so very much enjoy this time to myself.  On this particular trip, my main goal was to search for quick and healthy items for my lunches (now that I’m not forced to make grilled cheese sandwiches everyday)!

And what to my wondering eyes should appear, but six tiny boxes with Lean Cuisine oh so near!

Yes…I was actually that excited!  Healthy, low calories, a variety of meals, and UNDER $2.00 a box!  SOLD!  I grabbed some fruit and Aleve (because the kids WILL eventually be home) and my shopping excursion is complete (because I stuck to my list and didn’t deviate).  If you want to see all my shopping details, just click HERE.

Now, look at all the choices I have!

I don’t know about YOUR mornings…but, mine FLY by!  Once I get up, get myself ready and then get three kids ready for school and dropped off.  There are always a few errands to run, parts of the house to clean…and somewhere in there, I’d like to actually eat a yummy lunch (healthy and quick would just make it MORE awesome!).

My tip for you to make sure you get quick and easy lunches is to:

  • Snag a six-pack of Lean Cuisine at Sam’s Club (you’ll get two of each flavor:  Sesame Chicken, Ginger Garlic Stir Fry with Chicken, and Chicken Teriyaki)

Then, PREP, PREP, PREP.

A salad that is.

My favorite side item to eat with my Lean Cuisine is a salad.  BUT, to make my lunch SUPER fast, I keep my salad ingredients ALWAYS ready in the fridge.  It isn’t hard, do this on a Saturday or Sunday night..and you’ll be glad all week long that it’s ready and waiting for you.

  • Cut a head of lettuce and keep it in a sealed container
  • cut up tomatoes/cucumbers
  • and have anything else on hand that you like,
  • carrots
  • mushrooms
  • ham
  • bacon pieces
  • croutons
  • and don’t forget to make sure you have dressing!

While you are microwaving your Lean Cuisine meal, you’ll be able to whip up your salad.

I know…you can literally put it together in less than five minutes if you’ve done all the prep work!

AND…for the super mom (or dad) that you are..you’ll be able to sit back and enjoy one delicious meal before the kids get home!
